Royal Bean Soup Recipe
- 1 pound Navy beans
- 2 ham hocks
- 1 lg. carrot
- 1 lg. onion, slightly browned in a little oil, cut to your liking
- 1/2 teaspoon salt
- Dash of pepper
- 1/2 teaspoon sugar
- Soak beans overnight or possibly at least 4 hrs, drain.
- Cover with water to at least 1 inch above beans.
- Add in hocks and cook 2 hrs.
- Add in onion and carrots; cook till tender.
