Chicken Chow Mein
- 1 lb boneless chicken
- 12 cup unsalted peanuts
- 2 tablespoons vegetable oil
- 2 celery ribs, thickly sliced
- 1 12 cups bean sprouts
- 4 green onions, coarsely chopped
- 1 (455 ml) jar sweet and sour sauce
- 2 teaspoons soy sauce
- cooked rice
- Cut chicken in 1-inch cubes.
- In wok or skillet, toast peanuts over high heat, remove.
- Add oil.
- Stir fry chicken until no longer pink, 2-3 minutes.
- Add celery, sprouts, and onions nad fry for 3 minutes.
- Add sweet and sour sauce and soy sauce.
- Heat through for 1 minute.
- Serve on rice sprinkled with peanuts.
