Beef and Bacon Over Pasta (Fgkg27A)
- 6 slices bacon
- 1/2 large onions chopped
- 1/2 green green bell peppers
- 2 tablespoons flour, all-purpose
- 1 1/2 cups beef stock prefer veal stock if possible
- 1 x sage to taste
- 1 x salt to taste
- 1 x black pepper to taste
- 1 pound beef leftover rare, bite size
- 16 ounces black-eyed peas 1 can
- 1 pound noodles
- Chop about 6 slices bacon and saute until crisp.
- Remove and set aside.
- Add minced garlic, 1/2 chopped onion and 1/2 chopped green pepper, lightly saute in the bacon fat.
- Stir in about 2 tablespoons flour, stir until smooth.
- Slowly stir in 1 to 1 1/2 cups beef stock.
- Add sage, salt, pepper.
- Add leftover rare beef (bite size), 1 can black eyed peas and bacon crisp.
- Simmer until cooked through, and serve over warm pasta with Parmesan cheese.
- Good with chipped beef too.
