Florentine Manicotti

  1. Cook and stir onion and garlic in butter in small skillet on medium heat until tender.
  2. Mix onion mixture, spinach, ricotta, mozzarella cheese, Parmesan cheese, eggs, juice and seasonings until well blended.
  3. Fill manicotti shells with spinach mixture.
  4. Place in 13x9-inch baking dish; cover.
  5. Bake at 350 degrees F for 40 minutes.
  6. Heat sauce; pour over manicotti.
  7. Sprinkle with additional Parmesan cheese, if desired.
  8. Great Substitute: Substitute 2 pkg.
