Florentine Manicotti
- 1/2 cup chopped onion King Sooper's 1 lb For $0.99 thru 02/09
- 1 clove garlic, minced
- 1 Tbsp. butter or margarine
- 2 pkg. (10 oz. each) frozen chopped spinach, cooked, well drained
- 2 cups ricotta cheese or BREAKSTONE'S or KNUDSEN Cottage Cheese
- 1 pkg. (4 oz.) KRAFT Shredded Mozzarella Cheese
- 1/2 cup KRAFT Grated Parmesan or Romano Cheese
- 3 eggs, beaten
- 1 Tbsp. lemon juice Safeway 4 ct For $5.00 thru 02/09
- 1 tsp. salt
- Dash pepper
- 12 manicotti shells, cooked, drained
- 1 jar (14 oz.) spaghetti sauce
- Cook and stir onion and garlic in butter in small skillet on medium heat until tender.
- Mix onion mixture, spinach, ricotta, mozzarella cheese, Parmesan cheese, eggs, juice and seasonings until well blended.
- Fill manicotti shells with spinach mixture.
- Place in 13x9-inch baking dish; cover.
- Bake at 350 degrees F for 40 minutes.
- Heat sauce; pour over manicotti.
- Sprinkle with additional Parmesan cheese, if desired.
- Great Substitute: Substitute 2 pkg.
