Chicken Cacciatore Recipe
- 2 1/2-3 pound fryer, cut in pcs
- 1/4 c. veg. oil
- 1 sm. onion, minced
- 1 med. size green pepper
- 2 cloves garlic, minced fine
- 1 teaspoon parsley
- 1 (3 ounce.) can mushrooms (buttons)
- 1 (303 size) can tomatoes, cut up
- Salt & pepper to taste
- 1 c. cooking sherry wine
- Brown chicken pcs in warm oil till lightly browned.
- Add in onion, garlic pepper, garlic and mushrooms and cook with chicken till a golden.
- Then add in tomatoes and their juice, salt and pepper.
- Cover and simmer for 30-35 min till chicken is tender, then add in wine and parsley.
- Cook for 5 more min.
