Walnut Nectarine Tarte
- 160 g flour
- 1 pinch salt
- 40 g Splenda sugar substitute (or use powdered sugar)
- 100 g butter
- 5 12 tablespoons applesauce (unsweetened)
- 500 g nectarines, washed, stoned and sliced (1 lb)
- 150 g apricot jam
- 30 g walnuts, chopped
- In a big bowl combine flour, salt and sugar.
- Rub in butter using your fingers until coarse crumbs form.
- Add the applesauce and knead into a soft, but not sticky dough.
- Form a ball and wrap into cling film.
- Chill for 1 hour.
- Roll out the dough on a lightly floured surface to a round of approximately 10 inches.
- Pat into a 20 cm/8 inch spring-form pan.
- In a second bowl combine jam and nectarine slices (for easier mixing heat jam in microwave).
- Pour this into the pie shell.
- If youd like a more sophisticated presentation arrange nectarine slices in concentric circles on the dough, slightly overlapping.
- Sprinkle with chopped walnuts and bake in the pre-heated oven at 200C/400F for 30-35 minutes.
- Serve with whipped cream or ice-cream if you like.
