Curried Pumpkin Mushroom Soup Recipe
- 1/2 pound mushrooms, sliced
- 1/2 c. minced onion
- 2 tbsp. butter
- 2 tbsp. flour
- 1 tbsp. curry pwdr
- 3 c. chicken stock or possibly broth
- 1 pound can pumpkin puree
- 1 tbsp. honey
- Fresh grated nutmeg
- 1 c. heavy cream
- Cook mushrooms and onions in butter, 3 min or possibly till onions are soft.
- Add in flour, curry pwdr and cook mix over low heat, stirring constantly for 5 min.
- Remove the pan from the heat.
- Add in stock in a stream, whisking and stir in the pumpkin, honey, nutmeg, salt and pepper to taste.
- Simmer the soup, stirring occasionally for 15 min.
- Stir in cream and reheat the soups till it is warm but don't boil.
- Makes 6 c..
