Chicken Fajitas Spicy Style Recipe
- 1 1/2 tbsp. diced green chilies, canned or possibly fresh
- 1 med. tomato, minced
- 1 teaspoon oregano leaves
- 1/2 teaspoon cumin
- 1/2 teaspoon chili pwdr
- 1/4 teaspoon lite salt, or possibly less
- 1 tbsp. flour
- 2 chicken breasts, skinned & boned
- 2 teaspoon oil, divided
- 1 1/4 c. thinly sliced onion
- 1 clove garlic, chopped
- 2 c. sliced green or possibly red bell pepper
- 2 teaspoon minced cilantro (opt.)
- 4 flour tortillas
- Combine chilies, tomatoes, oregano, cumin, chili pwdr and lite salt.
- Cut chicken into 1/2-inch strips, roll in flour and mix into chilies/tomato mix.
- Set aside to marinate briefly.
- Heat 1 tsp.
- oil in fry pan and saute/fry onion and garlic for 3 to 4 min.
- Add in green pepper and continue cooking about 5 min.
- Remove from fry pan and keep hot.
- Cover and hot tortillas in oven or possibly microwave.
- Heat 1 tsp.
- oil in fry pan and saute/fry chicken.
- When no longer pink add in the vegetables.
- Sprinkle in cilantro, if using.
- Fill hot tortilla with 1/4 of chicken/vegetable.
- Roll up and serve.
- Makes 4 fajitas.
