Fish Stew
- 14 cup olive oil
- 2 cups chopped onions
- 2 cups sliced celery
- 2 cups wavy cut carrots
- 12 teaspoon chopped garlic
- 1 (8 ounce) can tomato sauce
- 4 (8 ounce) bottles clam juice
- 1 12 lbs fish fillets
- 1 tablespoon italian seasoning
- 3 cubed roman tomatoes
- 13 cup fresh parsley
- saute onions, garlic, celery, and carrots in stews pot.
- add 4 bottles of clam juice along with tomato sauce.
- simmer for 1/2 hr
- cut fish in cubes.
- add cubed fish fillet and simmer until fish is cooked
- add parsley and tomatoes and serve.
