Red Currant Jam

  1. Place the currants in a colander and rinse well to remove impurities.
  2. Place the currants and the water into a pot.
  3. Boil until softened.
  4. Strain the currants through a sieve to separate the stems and seeds (strain through a sieve).
  5. Divide the sugar into 2 portions and add to the pot.
  6. Simmer on low heat.
  7. Since it hardens easily, once it is still somewhat loose, remove from the heat.
  8. Store in a preservation jar in the refrigerator.
  9. This can be used with bread or sweets.
