Backyard's Jalapeno Cheese Grits Recipe

  1. Bring water to a boil.
  2. Add in grits and simmer for 5 min.
  3. (For thinner grits, add in more water.)
  4. Set aside.
  5. Heat butter in a large skillet over medium high heat; add in peppers and onion.
  6. Saute/fry till tender, about 5 min.
  7. Add in to grits, along with cheeses.
  8. Add in Large eggs and season with salt.
  9. Pour into a 2-qt casserole and chill till ready to cook.
  10. Bake in a preheated 350 degree oven for 25 min, or possibly till set.
  11. Serve immediately.
