Roasted Red Pepper Crostini

  1. Slice baguette and drizzle with olive oil.
  2. Bake in oven at 350F for 4-5 minutes.
  3. Finely dice peppers and mix with oil, salt and pepper (you can add minced garlic to this step).
  4. Top crostini/bread with a spoonful of the pepper mixture and top with Asiago cheese.
  5. Broil until cheese is melted.
  6. Sprinkle with fresh basil or parsley, if desired.
