Silken Tofu Stir-Fried Mizuna Greens

  1. Microwave the silken tofu without covering for 2 minutes!
  2. Let it cool, and discard excess moisture.
  3. Cut the mizuna leaves into 5 cm pieces.
  4. Heat the sesame oil in a frying pan, add the stem of mizuna greens first, then crumble the tofu into the pan.
  5. Add the shimeji mushrooms.
  6. Stir-fry the ingredients in the pan.
  7. Once they are coated with oil, add the leafy part of mizuna greens.
  8. Season with the sake and sugar, and stir-fry until tender.
  9. Once the greens are tender, add the mentsuyu and salt.
  10. Stir-fry until moisture in the pan cooks off.
  11. You can make side dish for two people from one bunch of mizuna greens.
