Cajun Salmon Tacos
- 2 whole Salmon Fillets (approximately 8 To 10 Oz Each)
- 2 Tablespoons Cajun Seasoning
- 3 cups Shredded Red Cabbage (for 3 Cups You'll Need Roughly One Small Head)
- 1/2 cups Red Onion, Chopped
- 3 whole Large Carrots, Shredded
- 2 whole Green Onions, Chopped
- 1/4 cups Vegetable Oil
- 2 Tablespoons White Vinegar
- 2 Tablespoons Brown Sugar
- 13 cups Mayonnaise
- 1/2 whole Lemon, Juiced
- 1 teaspoon Salt
- 1 teaspoon Ground Black Pepper
- 4 whole Taco Size Tortillas (flour Or Corn, Your Choice)
- Preheat the oven to 425 F.
- Rub salmon with Cajun seasoning and put it onto a lightly greased rimmed baking sheet.
- Bake for 20 to 25 minutes or until fish is cooked through.
- Meanwhile, add cabbage, red onion, carrot, and green onions to large bowl.
- In a medium bowl, whisk together remaining coleslaw ingredients (from oil to ground pepper).
- Mix to combine then add liquid ingredients to cabbage mixture and toss to combine well.
- Taste for seasoning, and adjust as necessary.
- When its done remove the salmon from the oven and put it onto a cutting board.
- Cut salmon into bite size pieces.
- Place salmon in tortillas, top with coleslaw and enjoy!
