7 Grain Corn Muffins
- 2 cups seven grain cereal cooked as per directions
- 2 cups water
- 2 tablespoons maple syrup
- 2 tablespoons vegetable oil
- 2 teaspoons sea salt optional
- 1 tablespoon baking powder
- 1/4 cup oats, quick cooking
- 2 cups cornmeal
- Mix all ingredients (except for cornmeal) in blender until very smooth.
- Mix in cornmeal with a spoon.
- Fill oiled muffin cups 1/2 full.
- Bake at 375F (190C) for 35 to 45 minutes.
