Crunchy Fresh Salad - Healthy & Vegan!
- 2 medium cucumbers
- 2 medium tomatoes
- 2 cup shredded fresh cabbage
- 2 medium carrots
- 2 large spring onions
- 4 tbsp mayonnaise (vegan for a vegan salad)
- 1 tsp mustard
- 1/2 tsp vinegar
- 1/2 tsp sugar
- 2 tbsp water
- Slice, dice or shred vegetables to your preference.
- Place in large bowl.
- Note: Feel free to use different vegetables - cauliflower, kohlrabi, radishes...
- In separate bowl, combine dressing ingredients.
- Let sit for a few minutes.
- Right before serving, pour dressing over vegetables and mix well.
- Enjoy!
