Finnish Coffee Bread

  1. Combine scalded milk, sugar and butter in a large bowl; cool to lukewarm.
  2. Add salt, eggs, cardamom, yeast dissolved in water and 5 cups flour.
  3. Stir well.
  4. Add more flour in 1/2 cup increments until dough forms a ball.
  5. Turn out onto floured board. Knead well, adding additional flour as necessary, until dough is dull, elastic and not sticky (approximately 10 minutes).
  6. Coat a large heat-resistant bowl with vegetable oil.
  7. Place kneaded dough in bowl and turn to coat with oil.
  8. Cover with a clean damp dishtowel (not terrycloth) or plastic wrap.
