Rudy's Pork Fried Rice

  1. Bring 4 cups water to boil in pot.
  2. Stir in 2 cups rice and cover.
  3. Reduce heat and simmer for 20 minutes or until all water is absorbed.
  4. Set aside.
  5. Meanwhile, dice barbecued pork and set aside.
  6. In a small skillet, scramble and fry eggs.
  7. Chop them up and set aside.
  8. Heat oil in a large skillet at medium heat.
  9. Quickly fry cooked rice, then add pork, shrimp, eggs and soy sauce to mixture.
  10. Heat through.
  11. Serve with soy sauce.
