Whole Wheat Pumpkin Muffins
- 1 1/2 c. sugar
- 1 (1 lb.) can pumpkin (2 c.)
- 3 eggs
- 1/2 c. salad oil
- 1 c. water
- 1 1/2 c. all-purpose flour
- 1 1/2 c. whole wheat flour
- 1 1/2 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 3/4 tsp. cinnamon
- 1/4 tsp. ground cloves
- 1 1/4 tsp. nutmeg
- 1 1/2 c. raisins
- 1 c. chopped nuts
- Preheat oven to 400u0b0.
- Combine sugar, pumpkin, eggs, oil and water.
- Beat at low speed for 1 minute.
- Sift together both flours and next 6 ingredients.
- Add to pumpkin mixture.
- Stir just until dry ingredients are moistened.
- Stir in raisins and nuts.
- Spoon into lightly greased muffin pans (2 1/2-inch diameter).
- Bake for 20 to 22 minutes.
