Leeks With Mushroom Sauce
- 8 leeks, trimmed and washed
- 2 shallots, chopped
- 2 tablespoons unsalted butter
- 2 garlic cloves, chopped
- 1 lb wild mushroom
- 1 tablespoon thyme, chopped
- 12 cup white wine
- 12 cup heavy cream
- 1 tablespoon Dijon mustard
- blanche leeks in salted water-8 minutes.
- pat dry and split lengthwise.
- place leeks in buttered ovenproof dish.
- roast in 375F oven for 30 minutes.
- melt butter in saute pan.
- saute garlic and shallots for 3 minutes.
- add mushrooms and saute for 4 minutes.
- add thyme and wine
- simmer.
- reduce by 1/2.
- add cream and mustard.
- simmer and reduce to 1/2.
- pour sauce over leeks.
