Chipotle-Pineapple Baked Salmon
- 4 salmon filets
- 1 cup crushed pineapple
- 1 cup chipotle salsa
- 1 tbsp roasted, ground cumin
- 1 tbsp roasted, ground coriander
- 2 tsp smoked paprika
- 2 tsp onion powder
- 2 tsp garlic powder
- 1 salt and pepper
- Marinate salmon in salsa for 4-48 hours.
- Put salmon on a baking sheet with non-stick cooking spray.
- Pour marinade over filets.
- Season.
- Top with crushed pineapple.
- Bake at 400for approximately 15 minutes or until thermometer reaches 145
