Mme. Dube's Healthy Apple Muffins

  1. Sift together flour, salt, baking powder, baking soda, cinnamon, nutmeg and brown sugar.
  2. Peel core and dice apple, walnuts, raisins and mix into dry ingredients.
  3. Mix milk, egg white, margarine and applesauce together and pour into dry ingredients mixing well.
  4. Add vanilla.
  5. Spray muffin tin with non-stick cooking spray (paper liners are not recommended) and fill 2/3 full with batter.
  6. Sprinkle a bit of oat flakes to the top of each muffin.
  7. Preheat oven to 400 degrees and cook for 15- 18 minutes.
