Pork on a Bun with Bourbon-Barbecue Sauce

  1. Sprinkle pork strips with salt and pepper.
  2. Heat oil in heavy large skillet over medium-high heat.
  3. Add pork strips and saute until just cooked through, about 2 minutes.
  4. Using slotted spoon, transfer pork strips to plate.
  5. Add onion to skillet.
  6. Saute until golden brown, about 7 minutes; remove from heat.
  7. Add bourbon and stir up browned bits.
  8. Add barbecue sauce.
  9. Simmer until sauce thickens, stirring often, about 3 minutes.
  10. Return pork strips to sauce; heat 1 minute.
  11. Mound pork strips with sauce on bun bottoms; top with coleslaw and bun tops.
