Peas With Garlic Recipe
- 4 c. shelled peas (fresh, canned or possibly frzn)
- 1 lg. onion, minced
- 2 cloves garlic, minced
- 5 tbsp. butter (or possibly half butter & extra virgin olive oil)
- Salt
- Healthy pinch of oregano (to taste)
- 2/3 c. stock (beef, chicken or possibly vegetable)
- If using fresh peas, shell and put them in a bowl of cool water to soak.
- Fry the onion and garlic slowly in butter till the onion is transparent, then add in the liquid removed peas and sprinkle with salt and oregano.
- Add in stock.
- Cover tightly and simmer very slowly for 30 min, stirring occasionally.
- Frzn peas will take 15 min.
- Serve warm.
