Ultimate Pumpkin Cookies
- 2 14 cups all-purpose flour
- 1 teaspoon pumpkin pie spice
- 12 teaspoon baking soda
- 1 cup unsalted butter
- 1 12 cups packed dark brown sugar
- 1 cup solid packed unsweetened pumpkin puree
- 2 large eggs
- 1 tablespoon vanilla extract
- 1 (12 ounce) bag white chocolate chips
- 1 cup pecans, chopped and toasted
- pre heat over to 300*F.
- In a small bowl combine the dry ingredients.
- in a medium bowl with an electric mixer, cream butter and sugar.
- Beat in pumpkin puree.
- Beat in eggs and vanilla.
- Beat in the flour mixture until just combined.
- Stir in the white chocolate chips and pecans.
- Drop dough by rounded tablespoon full 2 inches apart on an ungreased cookie sheet.

- Bake 20 to 22 minutes -- but watch them depending on your size of cookies.
