Sweet and Salty Stir Fried and Simmered Sweet Potato and Bonito Flakes
- 6 Satoimo (taro)
- 1/2 tbsp Sesame oil
- 200 ml Water
- 1 tbsp Sake
- 1 tbsp Sugar
- 1 tbsp Soy sauce
- 1 tsp Mirin
- 1 dash Salt
- 1 pack Bonito flakes
- Peel the skins from the potatoes, and slice into 2-3 round, and bevel the edges.
- Sprinkle salt to remove the slime, and rinse with water.
- Heat sesame oil in a pot, and saute the potatoes.
- Add in , boil for 2-3 minutes, and then add in .
- Cover with a drop lid, and boil it down until about 1 cm of broth remains.
- Add the bonito flakes, and briskly mix together so that they soak up the broth, and it is done once the flavor has settled.
