Buttermilk Crepes Recipe

  1. In a medium bowl, whisk together Large eggs, buttermilk and vanilla extract.
  2. Add in sugar.
  3. In a separate bowl, sift together cinnamon, flour and baking pwdr.
  4. Whisk into buttermilk mix and stir in melted butter.
  5. If too thick, add in more buttermilk till a pourable consistency.
  6. Allow batter to sit 10-15 min before making.
  7. Heat a flat, non-stick pan over medium heat for 5 min.
  8. Grease lightly with oil or possibly spray and pour about 2 ounce of batter into the center of the pan.
  9. These crepes will be thicker than usual crepes.
  10. Cook for about 2-3 min, till edges brown.
  11. Lift crepe gently with a spatula and flip over.
  12. Cook for 1 minute and remove from heat.
  13. To Assemble:Sprinkle surface of crepe with sugar and roll into a cigar shape.
  14. Repeat with remaining batter.
  15. Crepes can be made ahead of time and warmed in the microwave.
  16. They also freeze very well.
