Ginger Beef

  1. Slice beef lengthwise into 1 1/2-inch strips.
  2. Cut strips crosswise into 1/4-inch slices.
  3. Toss beef, cornstarch, 1 tablespoon oil, salt, sugar, white pepper and 1 tablespoon soy sauce in a plastic bowl.
  4. Cover and refrigerate for 1/2 hour.
  5. Cut green onions diagonally into 1-inch pieces.
  6. Heat wok until very hot.
  7. Add 2 tablespoons oil.
  8. Rotate to coat sides.
  9. Add beef, ginger and garlic.
  10. Stir-fry for 3 minutes or until beef is brown. Add green onions and 2 tablespoons soy sauce.
  11. Stir-fry 2 minutes.
  12. Serve over steamed white rice.
