The Omg I Found It, Cheesecake!
- 1 14 cups graham cracker crumbs
- 14 cup granulated sugar
- 13 cup butter, melted
- 1 cup pecans
- 2 (8 ounce) packages cream cheese
- 12 cup brown sugar, packed
- 2 teaspoons vanilla extract
- 2 eggs, large
- 14 cup caramel topping
- Preheat oven to 325F.
- Mix graham cracker crumbs, melted butter and granulated sugar and press firmly into a 9-inch spring form pan, allowing it to go up against the sides slightly.
- Beat cream cheese, brown sugar and vanilla in a small bowl on medium speed until well blended, then add both eggs and mix just until incorporated fully.
- Pour over crust and arrange pecans around the edge.
- (I usually use more pecans, crush them and use them for topping later, too).
- Baked 40-45 minutes or until center is almost set.
- Cool on wire rack COMPLETELY, then refrigerate at least 4 hours.
- Drizzle with caramel topping and more pecans if desired just before serving.

- You can use margarine for the crust and low-fat cream cheese.
- This won't be a white cheese cake, or a high rising one, feel free to post variations on it, I'm always up for new ideas.
