Pork Chops with Beer, Apples & Creamy Mashed Potatoes
- 1-3/4 lb. (790 g) Yukon gold potatoes (about 7), peeled, cut into 1-inch chunks
- 1/4 cup Kraft Extra Virgin Olive Oil Fig Balsamic Dressing, divided
- 1 large Vidalia onion, cut lengthwise in half, then sliced crosswise Safeway 1 lb For $1.49 thru 02/09
- 2 Gala apples, peeled, shredded
- 1 cup beer
- 2 tsp. brown sugar
- 2 Tbsp. oil, divided
- 6 bone-in pork chops (2 lb./900 g), 1/2-inch thick
- 1/3 cup Philadelphia Cream Cheese Product
- 3 Tbsp. milk
- 2 Tbsp. chopped fresh chives
- Cook potatoes in large saucepan of boiling water on medium-high heat 15 to 20 min.
- or until tender.
- Meanwhile, heat 2 Tbsp.
- dressing in large nonstick skillet on medium heat.
- Add onions; cook 10 min.
- or until softened, stirring frequently.
- Stir in apples, beer and sugar; simmer on medium-low heat 4 to 5 min.
- or until beer is cooked off.
- Transfer to plate; cover to keep warm.
- Heat 1 Tbsp.
- oil in same skillet on medium-high heat.
- Add 3 chops; cook 3 min.
- on each side or until done (160 degrees F); brush with 1 Tbsp.
- of the remaining dressing.
- Transfer to separate plate; cover to keep warm.
- Repeat with remaining oil, chops and dressing.
- Drain potatoes; return to saucepan.
- Add cream cheese product, milk and chives; mash until potatoes are smooth.
- Serve with chops and apple mixture.
