Palak Paneer

  1. Clean spinach.
  2. Separate the leaves from the stems and wash thoroughly with water.
  3. In a mixer or grinder, add spinach, cilantro, green chile, ginger, garlic, cinnamon, cardamom, cloves and grind to a smooth paste with little water.
  4. In a pan, add oil and cumin seeds.
  5. When the cumin seeds sputter, add chopped onion.
  6. Fry onion until mushy and cooked well.
  7. Add the spinach paste and cook for a few minutes.
  8. Add salt, sugar, turmeric, kasoori methi, and garam masala.
  9. Add paneer cubes and cook well.
  10. Add a little bit of water to make the gravy if the consistency is too thick.
  11. Add yogurt.
  12. Mix once and turn off the heat.
  13. Garnish with cream and serve hot with naan, kulcha, kerala paratha or rice.

  15. You can adjust spices as per your choice.

  17. If desired, you can fry the paneer cubes before adding them to the gravy.

  19. If you want a tangier version, squeeze in a lime.

  21. For me, adding a bit of sugar gives a nice taste to this dish.
  22. If you do not wish to add sugar, you can omit it.
