Palak Paneer
- 1 bunch Spinach
- 16 cubes Paneer (Cottage Cheese)
- 1 cup Cilantro
- 1 whole Green Chile
- 1 piece (1-inch Size) Ginger, Peeled And Sliced
- 4 cloves Garlic
- 1/2 Inch Cinnamon Stick
- 1 whole Green Cardamom
- 2 whole Cloves
- 1 Tablespoon Oil
- 1 teaspoon Cumin Seeds
- 1 whole Onion, Chopped
- Salt To Taste
- Sugar, To Taste
- 1/2 teaspoons Turmeric Powder
- 1 teaspoon Kasoori Methi (Dried Fenugreek Leaves)
- 1 teaspoon Garam Masala Powder
- 2 teaspoons Thick Yogurt, Whisked
- 1 Tablespoon Thick Cream
- Clean spinach.
- Separate the leaves from the stems and wash thoroughly with water.
- In a mixer or grinder, add spinach, cilantro, green chile, ginger, garlic, cinnamon, cardamom, cloves and grind to a smooth paste with little water.
- In a pan, add oil and cumin seeds.
- When the cumin seeds sputter, add chopped onion.
- Fry onion until mushy and cooked well.
- Add the spinach paste and cook for a few minutes.
- Add salt, sugar, turmeric, kasoori methi, and garam masala.
- Add paneer cubes and cook well.
- Add a little bit of water to make the gravy if the consistency is too thick.
- Add yogurt.
- Mix once and turn off the heat.
- Garnish with cream and serve hot with naan, kulcha, kerala paratha or rice.

- You can adjust spices as per your choice.

- If desired, you can fry the paneer cubes before adding them to the gravy.

- If you want a tangier version, squeeze in a lime.
- 4.
- For me, adding a bit of sugar gives a nice taste to this dish.
- If you do not wish to add sugar, you can omit it.
