Refrigerator Cookies
- 2 stick butter
- 1 egg + 1 egg yolk
- 1 1/4 cup sugar
- 2 3/4 cup flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 finely chopped nuts
- 3/4 tsp pure vanilla extract
- Cream together the butter, eggs, sugar and vanilla extract.
- Gradually add the flour, baking soda and salt.
- Fold in the nuts.
- Roll the dough into a log about 1 1/2 inches in diameter and wrap in waxed paper.
- Freeze for an hour or refrigerate for several hours.
- Preheat the oven to 350F.
- Remove the dough from the freezer and thinly slice, about 1/4 inch thick.
- Place on ungreased cookie sheets and bake for 12 to 15 minutes.
- Let cool for 5 minutesand then transfer to wire racks to cool completely.
