Mexican Chicken-Rice Skillet

  1. Combine first 4 ingredients in large skillet sprayed with cooking spray; top with chicken.
  2. Bring to boil; cover.
  3. Simmer on medium-low heat 25 min.
  4. or until chicken is done (165F).
  5. Top chicken with tomatoes and olives; cover.
  6. Cook 5 min.
  7. Remove from heat.
  8. Sprinkle with cheese.
  9. Let stand 5 min.
  10. or until cheese is melted and all liquid is absorbed.
