Apple Pirushkes Recipe

  1. Pour the boiling water over the salt, 1 Tbsp.
  2. of sugar and shortening.
  3. When it is lukewarm, add in the yeast that has been dissolved in the 2 Tbsp.
  4. of lukewarm water.
  5. Add in the egg and 1 1/2 c. of the flour.
  6. Let this batter rise at 85F till double in bulk, then add in the remaining flour.
  7. Knead till smooth.
  8. Let rise again for 1 hour.
  9. Divide the dough into 14 parts.
  10. Roll out each part till 1/2" thick.
  11. Peel, core, and cut apples in half.
  12. Place a half, cut side up, on each piece of dough.
  13. Combine the remaining ingredients and fill the cores with the mix.
  14. Press the dough firmly together over the apples and invert on a dull, greased, cookie tin.
  15. Brush with melted shortening, and sprinkle with a little sugar and grnd cinnamon.
  16. Let rise for 1 hour.
  17. Bake at 350F for 40 min, till a rich brown.
  18. Serve warm.
  19. Allow 1 or possibly 2 for each portion.
