Baba Ganouj (Vegan)
- 1 whole Eggplant
- 1 Tablespoon Olive Oil
- 2 cloves Garlic
- 1/4 cups Lemon Juice
- 1/4 cups Tahini
- 1/2 teaspoons Salt
- 1/4 teaspoons Cayenne Pepper
- 1/4 teaspoons Black Pepper
- 3 dashes Hickory Smoke Flavoring
- 1.
- Slice eggplant in half.
- Brush olive oil on top, and place face down on a baking sheet.
- Bake for 30 minutes in a 350-degree oven (or until soft).
- 2.
- Place all other ingredients in a food processor or blender, and blend till smooth.
- When eggplant is finished baking, let cool until it is workable.
- Scoop out the pulp (everything but the skin), and place in the food processor along with the other blended ingredients.
- Puree until smooth.
- Serve with your favorite crackers, bread, or vegetables.
- Enjoy!
