Bran Flax Muffins Recipe
- 1 1/2 c. all-purpose flour
- 3/4 c. grnd flaxseed
- 3/4 c. oat bran
- 1 c. brown sugar
- 2 tsp baking soda
- 1 tsp baking pwdr
- 1/2 tsp salt
- 2 tsp cinnamon
- 1 1/2 c. finely shredded carrots
- 2 x peeled & shredded apples
- 1/2 c. raisins (optional)
- 1 c. minced nuts
- 3/4 c. lowfat milk
- 2 x beaten Large eggs
- 1 tsp vanilla
- 2 Tbsp. canola oil
- Mix together flour, flaxseed, oat bran, brown sugar, baking soda, baking pwdr, salt and cinnamon in a large bowl.
- Stir in carrots, apples, raisins and nuts.
- Combine lowfat milk, beaten Large eggs, vanilla and oil.
- Pour liquid ingredients into dry ingredients.
- Stir till moistened.
- Don't over mix.
- Fill muffin c. 3/4 full.
- Bake at 350 for 15-20 min.
- Yields: 15 muffins
