Fresh Pineapple Nut Bread

  1. In a mixing bowl, beat butter, eggs and brown sugar.
  2. Combine the flour, baking powder, salt, baking soda and nuts; stir half into egg mixture.
  3. Add pineapple, then remaining flour mixture.
  4. Pour into a greased 8x4x2 inch; loaf pan.
  5. Combine sugar and cinnamon; sprinkle over loaf.
  6. Bake at 350F (180C) for 50 to 55 minutes or until bread tests done.
  7. Cool on a wire rack.
