Coconut Rice and Shrimp -- (Bolivar, Colombia)
- 1 Tbsp. butter
- 1 medium onion, cut into 1/2-inch-thick slices
- 3 cloves garlic, minced
- 1 can (14 oz.) coconut milk
- 2 cups long-grain white rice, uncooked
- 3-1/2 cups fish stock or water
- 2 lb. medium shrimp, cleaned
- 1/2 cup chopped cilantro
- 2 Tbsp. lime juice Safeway 3 ct For $1.00 thru 02/09
- Melt butter in large deep skillet or Dutch oven on medium heat.
- Add onion and garlic; cook 2 minutes, stirring occasionally.
- Add coconut milk, rice and fish stock; stir.
- Bring to boil; cover.
- Reduce heat to low; simmer 20 minutes.
- (All of the liquid will not be absorbed.)
- Stir in shrimp.
- Simmer, covered, an additional 10 minutes or until shrimp turn pink.
- Remove from heat.
- Let stand 5 minutes.
- Stir in cilantro and lime juice.
