Coconut Rice and Shrimp -- (Bolivar, Colombia)

  1. Melt butter in large deep skillet or Dutch oven on medium heat.
  2. Add onion and garlic; cook 2 minutes, stirring occasionally.
  3. Add coconut milk, rice and fish stock; stir.
  4. Bring to boil; cover.
  5. Reduce heat to low; simmer 20 minutes.
  6. (All of the liquid will not be absorbed.)
  7. Stir in shrimp.
  8. Simmer, covered, an additional 10 minutes or until shrimp turn pink.
  9. Remove from heat.
  10. Let stand 5 minutes.
  11. Stir in cilantro and lime juice.
