Beef With Snow Peas And Mushrooms(Bo Xao Dau Hoa-Lan)

  1. Prepare the rice and set aside.
  2. Soak mushrooms with hot water until soft, about 20 minutes.
  3. Drain; rinse well, remove the stems and cut into quarters.
  4. In a wok or skillet over high heat, add 1/2 tablespoon of oil and onion.
  5. Stir-fry for 1 minute.
  6. Add beef, garlic, m.s.g, soy sauce and pepper into the wok.
  7. Stir-fry until the beef is cooked, about 2 minutes.
  8. Remove to a plate. Return the wok to high heat and add the remaining oil.
  9. Add mushrooms and carrot; stir-fry for 1 minute.
  10. Add oyster sauce and chicken stock and cook until reduced by half.
  11. Add snow peas and cook for 1 minute.
  12. Add beef mixture to the wok and cook just to heat through.
  13. Serve with rice.
  14. Makes 2 to 4 servings.
