Easy Spanish Rice

  1. Heat oil in sauce pot.
  2. Add onions and sweat until translucent.
  3. Add tomatoes and rice.
  4. Add salt and pepper.
  5. Stir.
  6. Cook 30 seconds
  7. Add water.
  8. Bring to simmer.
  9. Cover and cook 20 minutes.
  10. Remove from heat.
  11. Leave covered to steam 5-10 minutes.
  12. Fluff
