Bok Choy with Shiitake Mushrooms

  1. Trim ends of bok choy.
  2. Wash, pat dry with paper towels, and then set aside.
  3. Heat a large skillet or wok over medium-high heat.
  4. Add oil, and then stir in garlic and shallots.
  5. Cook for 1-2 minutes, or until soft, and then stir in shiitake mushrooms.
  6. Stirring occasionally, cook the mushrooms for 2-3 minutes or until they are browned and release some of their water.
  7. Stir in bok choy.
  8. Cook for 1-2 minutes, or until bok choy is just wilted.
  9. Stir in fish sauce, rice vinegar, sugar, and black pepper, and cook for about 1 minute or until heated through.
  10. Serve warm.
