Bourbon Barbecue Sauce

  1. In a medium saucepan, heat the oil over medium heat and add the onion and garlic and saute until tender, about 5 minutes.
  2. Add the ketchup, 1/4 cup of the bourbon, vinegar, Worcestershire sauce, molasses, mustard, soy sauce, Tabasco, black pepper, and cayenne.
  3. Mix thoroughly.
  4. Smoke on your smoker for 2 hours or add the liquid smoke and simmer for 20 minutes over low heat on the stovetop.
  5. Stir in the remaining 1/4 cup bourbon.
  6. Use as a basting sauce or as a finishing and table sauce on beef, chicken and pork.
