Chorizo and Kale Soup
- 2 lb. fresh chorizo sausage, sliced 1/4-inch thick
- 2 md. onions, chopped
- 2 bunches kale, washed and chopped
- 2 qt. beef stock
- 2 qt. chicken stock
- 1 cup white
- red wine
- 1/4 lb. butter
- Melt the butter in a large stockpot.
- Add the onions and chorizo and saute until the chorizo is browned and the onions are tranlucent.
- Deglaze the pot with the wine and bring to a simmer.
- Add both stocks and return to a simmer.
- Add the chopped kale and simmer for 20 minutes.
