Shrimp Etouffee
- 3/4 cups Butter
- 6 Tablespoons Flour
- 1 cup Chopped Onion
- 1 cup Diced Celery
- 1/2 cups Chopped Red Pepper
- 1/2 cups Chopped Yellow Pepper
- 6 Green Onions, Thinly Sliced
- 3 cups Water
- 3 Tablespoons Cajun Seasonings
- 1/2 teaspoons Salt
- 1/2 teaspoons Pepper
- 2 pounds Peeled, Deveined And Chopped Shrimp
- Cooked Rice, For Serving
- Melt butter in a large skillet over medium heat then stir in flour.
- Stir constantly until it becomes a rich dark brown.
- Add vegetables and cook until tender, about 5 minutes.
- Stir in water and seasonings.
- Simmer uncovered for 20 minutes or until it starts to thicken.
- Add shrimp and cook for another 5 minutes.
- Serve over rice.
