Shrimp Etouffee

  1. Melt butter in a large skillet over medium heat then stir in flour.
  2. Stir constantly until it becomes a rich dark brown.
  3. Add vegetables and cook until tender, about 5 minutes.
  4. Stir in water and seasonings.
  5. Simmer uncovered for 20 minutes or until it starts to thicken.
  6. Add shrimp and cook for another 5 minutes.
  7. Serve over rice.
