Margarita Jelly
- 1 1/2 cup freshly squeezed lime juice
- 1/2 cup freshly squeezed orange juice
- 1 cup water
- 4 1/2 cup sugar
- 1/4 cup tequila
- 1 tsp grated lime zest
- 1 packages (1 3/4 ounces) powdered fruit pectin
- 1 lime peel strips
- 2 drops green food coloring
- In a large Dutch oven, combine fruit juices, water, and pectin over medium high heat.
- Bring to a rolling boil.
- Add sugar.
- Stirring constantly, bring to a rolling boil again and boil 1 minute.
- Remove from heat; skim off foam.
- Stir in tequila, lime zest, and food coloring.
- Place a lime strip in each heat resistant jar.
- Spoon jelly into jars; cover and cool to room temperature.
- Store in refrigerator.
- *This recipe makes about 6 1/2 cups jelly.
