Margarita Jelly

  1. In a large Dutch oven, combine fruit juices, water, and pectin over medium high heat.
  2. Bring to a rolling boil.
  3. Add sugar.
  4. Stirring constantly, bring to a rolling boil again and boil 1 minute.
  5. Remove from heat; skim off foam.
  6. Stir in tequila, lime zest, and food coloring.
  7. Place a lime strip in each heat resistant jar.
  8. Spoon jelly into jars; cover and cool to room temperature.
  9. Store in refrigerator.
  10. *This recipe makes about 6 1/2 cups jelly.
