Stuffed Zucchini
- 1 whole Large Zucchini
- 1 cup Jimmy Dean Hot Sausage
- 1/2 cups Chopped Red And Green Pepper
- 1 can 4.5 Oz Green Chilis
- 1/2 cups Minute Rice
- 1/2 cups Water
- 1 cup Shredded Cheese Mexican Style
- 3 slices Pepper Jack Cheese Crumbled
- Cut the zucchini in half length wise.
- Coat the center with a little oil and salt/pepper.
- Stick this is the oven at 450F for about 5 minutes.
- While that is in the oven begin browning the sasuage.
- Remove the zucchini from the oven and scoop out the center.
- You can either add this to the sasuage if its not to seedy or trash it.
- Add to the sasuage mixture the green and red peppers, green chilis, rice and water.
- Cook for 5 minutes.
- Remove from heat and stir in the shredded cheese.
- Using the sasuage mixture fill the center of the zucchini and top with the pepper jack cheese
- Place the filled zucchini in foil and make a foil tent so that the cheese does not get stuck.
- Place on a baking sheet and cook at 350 for 30-35 minutes.
