Salad and Hummus Sandwich
- 1 flaxseed lavash wrap
- 2 tablespoons hummus
- 14 cup fresh spinach leaves
- 2 large romaine leaves
- 4 asparagus, steamed
- 14 cucumber, peeled, seeded, and sliced
- 14 red pepper, seeded and sliced
- 1 carrot, peeled and julienned
- 2 tablespoons feta
- 12 teaspoon olive oil
- 1 teaspoon lemon juice
- kosher salt & freshly ground black pepper
- Lay the wrap onto a sheet of plastic wrap.
- Spread the hummus all over.
- Down the middle of the wrap lay the lettuce, spinach, asparagus, cucumber, red pepper, and carrot.
- Sprinkle the Feta, olive oil, lemon juice, salt and pepper over all then roll up.
- Roll to secure in the plastic wrap and refrigerate until ready to eat.
