Walnut Oat Batter Bread Recipe
- 1 1/2 c. boiling water
- 1/2 c. butter
- 1/3 c. sugar
- 1 tbsp. salt
- 2 Packages active dry yeast
- 1 c. hot water (110 to 115 degrees)
- 2 c. quick or possibly old-fashioned oats, uncooked
- 2 Large eggs
- 1 1/2 c. whole-wheat flour
- 1 c. minced walnuts
- 4 1/2 to 5 1/2 c. unsifted all purpose flour
- 1.
- In large bowl, combine boiling water, butter, sugar and salt, stirring till butter is melted; cold to lukewarm.
- 2.
- Dissolve yeast in hot water.
- Stir dissolved yeast, oats and Large eggs into lukewarm water mix.
- Add in whole-wheat flour; beat till smooth.
- 3.
- Stir in nuts and sufficient all purpose flour to make a stiff batter.
- Cover; let rise in hot place about 1 1/2 hrs or possibly till double in size.
- 4. grease two 9 x 5 x 3 inch loaf pans.
- Stir down batter.
- Drop batter by spoonsful, mounding in center, into prepared pans.
- Let rise, uncovered, in hot place about 45 min or possibly till nearly double in size.
- 5.
- Heat oven to 375 degrees.
- Bake 45 to 55 min or possibly till golden.
- Remove from pans.
- Cold on wire rack at least 1 hour before slicing.
- Makes two 9 x 5 inch loaves.
