Spring & Summer Pizza
- 1 whole Pizza Dough (See My Recipe Box)
- 1 Tablespoon Olive Oil
- 1/2 cups Parmesan Cheese, Grated
- 2 whole Fresh Tomatoes Sliced Thinly
- 4 cloves Large Garlic, Chopped Roughly (Or Less To Taste)
- 3/4 teaspoons Kosher Salt
- 2 cups Spring Mix Leafy Herbs (Loosely Packed) - I Like The Organic Mix Found In Our Grocery
- 10 ounces, weight Fresh Mozzarella Cheese, Sliced
- 1/4 cups Balsamic Vinegar For Drizzling
- Preheat oven to 500 degrees.
- Roll out pizza dough into a rectangular shape.
- Drizzle on olive oil, followed by a little parmesan.
- Place in the oven as is for about 10 minutes.
- While dough is prepping in the oven, lay sliced tomatoes on paper towels to drain water.
- Place another paper towel on top and press lightly to remove all excess moisture.
- (This step is important!)
- Remove dough after 10 minutes and layer ingredients in this order: garlic, tomatoes, kosher salt over tomatoes, herb mix, mozzarella.
- Bake at 500F for 10 to 15 minutes until cheese is bubbly and slightly browned.
- Cool, cut and just before serving, LIGHTLY drizzle with balsamic vinegar.
- Your salad ala pizza!
