Spicy Blueberry Pork Tenderloin
- 2 cup Blueberry Preserves
- 2 tbsp Whole Grain, Stone Ground Dijon Mustard
- 1/4 tsp Chipolte Powder
- 1/2 Orange (zest and juice)
- 1 Pork Tender Loin
- 1 tbsp Whole Grain, Stone Ground Dijon Mustard
- 1 dash Salt & Pepper
- Sauce: mix well in a pot on low heat until it turns into a glaze
- Pork Tender Loin: rub with dijon mustard, sprinkle with salt and pepper, broil in the oven, turn every few minutes until done
- Plating: slice tender loin into thick slices, pour blueberry sauce over top and serve
